人之水滴
怱怱又一年!每逢歲晚,總有吃好喝好的理由;尾禡、還神、謝灶、團年、嘩啦嘩啦,種種祈福祭祀,總離不開廣東偉大發明:明爐燒臘!人不吃神仙祖先也得吃唷!
最近收到粉絲詢問,雷司令可以配豬肉嗎?當然可以!君不見雷司令的產地, 如奧地利、德國,都有脆皮燒腩和豬手嗎?
烹豬肉的高手,還有萄葡牙呢!説起葡萄牙就想起《母拉撒》酒莊的都羅紅酒。釀酒師安東尼奧是他們家第三代的當家,未接管家族生意之前是藝術雜誌的老編,酷愛藝術也熱愛釀酒。十多年前他接管家族生意時,決定把莊園正式註冊為生物動力學莊園。熱愛藝術的人,都是完美主義者。他為了物種多元化以及保育生態,保留了大部分的樹林,捨不得過度種植而導致傷害土地。葡萄園周邊都保留了杏仁樹。最老的一塊葡萄園,歷時超過九十年,採用混合品種種植,讓昆蟲可以完成跨品種授粉,使葡萄更健康更精良。他們還堅持用腳踏的方式來壓榨葡萄。
圍繞著他們家在都羅的葡萄園是鬱鬱蔥蔥的杏仁樹林,使得濃郁的紅酒,除了芬芳的紅漿果氣息以外,還泛著一股幽幽的杏仁香。雄渾的酒體,配紅燒脆皮豬、發財豬手、滿掌金錢、芋頭燜扣肉、紅燒元蹄,款款皆宜。2012一點兒也不老,過兩三年才開始步入高峰。現在享受,可以先透氣兩小時。
每一個城市都有它獨特的氣味,我真的指氣味。在巴黎總聞到牛油,在義大利,處處都有咖啡香,香港呢,除了銅臭,最明顯是薑蔥,特別是華燈初上,戶戶做飯的時間。歲晚的香港有酒香、有肉香、有燜冬菇、有燜蠔豉香、還有檀香、沈香、蠟燭和衣紙香。歷來我們供奉神明都是用米酒,幹嘛不用紅酒,也讓灶君財神時髦時髦。一來可以透氣、二來有藉口開酒,不怕給老婆嘀嘀咕咕唷!
Beverage for Gods
Time flies and here comes Chinese New Year. Every year end, we have good occasions to wine and dine such as : the Last Full Moon, “ Thanks Giving “ , Kitchen God Day, Year End Reunion Dinner …you name it !
Recently I had received query from a wine buddy that if Riesling is good for pork. Of course ! In most countries that grow Riesling , they have very good pork dishes like suckling pork and knuckle in Germany and Austria.
Portuguese also makes very good pork dishes. This reminds me of the Douro red wine of Casa de Mouraz. The current chief and wine maker is Antonio Lopez Ribeiro, the third generation of his family business. Before he took over Casa de Mouraz, he used to be the chief editor of an art magazine. He loves art and is passionate on wine making. When he took over the family business, he decided to go organic and biodynamic officially. Those who love art are always perfectionists. He kept the almond tree forest in his estate to enable bio-diversity and to conserve the eco-system. The oldest plot of vineyard is more than 90 years old. He planted different varietals in the same field and let insects do cross pollination to keep the vine healthy and to improve the genes. They insist to use their traditional method to press wine by treading by human.
Surrounding their Douro vineyard are the almond trees. Other than the rich red berries aromas in the full-bodied red wine, you will smell very pleasant almond. This rich Douro goes well with Cantonese BBQ Suckling Pig, Stewed Knuckle with Black Mushroom, Braised Pork Belly with Taro, Shanghaies Slow Cooked Pork Leg with Soy Sauce. It is indeed pretty versatile. 2012 with bottles age of 10 years, it is youthful. I think in 2 to 3 years’ time it will be even better. To enjoy it now, you may allocate 2 hours for breathing.
Every city has got its own special smell, I mean it. I smell butter in Paris and in Venice, I smell coffee. In Hong Kong, other than the scent of money, there is always ginger and scallion, especially in the nightfall when every home is cooking dinner. When Chinese New Year is around the corner, Hong Kong always smells rice wine, Cantonese BBQ, slow cooked black mushroom, dried oyster, sandal wood, joss stick, candle and burnt joss paper. I wonder why we use only rice wine to offer gods and ancestors instead of red wine? I think Kitchen God and Money God will be happy to try something else. You may breathe your wine when offer a little glass to gods. And it is a very good excuse to open a bottle avoiding the mumble jumble of your wife.
