我們蜑家人叫蛋、卵做「春」。君不見俚語有云:雞春咁密都”步”出蛋!
這個春天遇上了極品鯔春。鯔魚又名烏魚。烏魚子是海味中珍品。台灣盛產烏魚子,上品動輒要上千一副。可惜卻打不動我的心。因為蜓家人出生,從小什麼魚的卵都吃遍了,我字典中的極品魚春是撻沙春。幼滑甘甜、細膩爆爽;遺憾的是因為魚子本身太幼小了,製造費事而產量低,漁家們都不怎樣願意生晒撻沙春。退而求其次只有黃花春了。
有幸認識了意大利撒丁島一位老漁夫安東尼奧的姪子,他介紹了我吃他叔叔的即報即宰即生晒的烏魚子。憑我蜑家妹的味覺,我肯定這是百分百活魚生曬的魚籽。拆開真空封套,鮮香撲鼻。對這魚籽用各種方法炮製,都是對安東尼奧手藝的不敬!這是我吃過烏魚籽中,唯一可以即食,不必加工。當然也適合很多不同的食譜。經過多番嘗試,要達到最理想的效果,是用牛油紙包好,烤箱200度預熱,然後調低至100度,放入爐中烤3-5分鐘,牛油紙開始變微燋即可。魚子的表面2毫米會鬆化,核心依然軟糯,有外酥內嫩的效果。

Longing for Spring!
We, the Tanka people, call eggs "spring". So do Cantonese folks.
This spring we encountered the best Mullet Roe: Bottarga di Muggine. This is the Small Grey Mullet Roe from the small Island of Sardinia. Mullet roe is a seafood delicacy. Taiwan is rich in mullet roe, and the best quality ones can cost thousands of dollars a pair. Unfortunately, it can't move my heart. Born as a Tanka, I have eaten all kinds of fish roe since I was a child. The best fish roe in my dictionary is local Hong Kong Sole Roe. It is smooth, sweet, delicate and crispy; unfortunately, because the roe itself is too small, it is difficult to make and the yield is low, so fishermen are not very willing to dry Sole roe raw. The next best thing is the Yellow Flower Roe.
I was fortunate to meet the nephew of Antonio, an old fisherman in Sardinia, Italy. He introduced me to his uncle's Bottarga di Muggine, that was freshly caught, gutted, and dried. With my taste buds as a Tanka girl, I am sure that this is 100% fish roe from living fish that has been dried raw. Open the vacuum seal and the aroma will burst into your nose. Any method of preparing the fish roe is disrespectful to Antonio's craftsmanship! This is the only mullet roe I have eaten that can be eaten immediately without any processing. Of course, it is also suitable for many different recipes. I have done it with many ways. The best I like is to wrap the Mullet Roe with baking paper, pre-heat oven at 200 degrees, then lower to 100 and roast it for 3 to 5 minutes. The outer 2mm will be carnalized and the inner is still rare.
